Jamie Grainger-Smith, Founder, Think Eat Drink
Jamie Grainger-Smith founded Think Eat Drink in January 2010 to input smart and sustainable thinking into the hospitality industry and change the wasteful ways of the past. This thinking was applied to many projects culminating in the design and launch of multi-award winning and sustainable restaurant, Acorn House in Kings Cross.
Since then, Jamie applied this knowledge to launch Water House in Hoxton and is currently working with the groundbreaking members club concept ‘The Hub’ Kings Cross; he is also working with a award winning charity in delivering a new approach on the exciting eight community driven cafes.
With over 20 years experience in the hospitality industry Jamie has worked with high-calibre clients and managed some of London's top restaurants. Most notably he collaborated and co-founded with Jamie Oliver in creating the acclaimed Fifteen Restaurant project, which now has three sister restaurants worldwide.
Involved from the outset, Jamie was responsible for the strategic direction and implementation of Fifteen, including finding the location, consulting on the interior/ergonomic design, staff recruitment and training through to the launch. He then successfully managed Fifteen Restaurant for a further 3 years.
He is a passionate advocate of providing opportunities in all aspects of staff training in the hospitality industry. Fifteen is a true success training story along with Acorn House and this has continued with the launch of it's sister restaurant Water House in Shoreditch.
Other high profile appointments have included Montes Private Members Club, re-launching the venue alongside Ben Donoghue and Jamie Oliver; Morton's in Berkeley Square; the world famous River Café in Hammersmith and he also worked along side the father of 'Modern British' cooking, Alastair Little.
Jamie also had the honour of being one of the 1000 most influential people in London 2008 (Evening Standard). |
